Orange Slice Bowl with Orange Mousse

Ingredients
  

  • 2 oranges, sliced
  • 0.5 cup water
  • 0.5 cup orange juice
  • 1.25 cups sugar
  • 0.25 cup sugar
  • 2 gelatin sheets, soaked
  • 1 cup whipped cream

Instructions
 

  • Preheat the oven to 225°F. Cut 2 oranges into about ⅛-inch thick slices. Add the water, orange juice, and sugar to a saucepan and bring to a boil. Briefly blanch the orange slices in the liquid, remove them, and let them drain. Set the liquid aside for the orange syrup later on.
  • Line a bowl with parchment paper and arrange the orange slices around the inside of the bowl in an overlapping pattern.
  • Place the smaller bowl inside the bowl with the orange slices to weigh them down. Place the bowl inside the oven and cook for about 2 hours with the oven door slightly open to dehydrate the fruit.
  • Grate the zest of 1 orange, peel the other orange, and set both the orange zest and the orange peels aside. Squeeze the juice from the 2 oranges and add the orange juice, sugar, and soaked gelatin sheets to a saucepan and bring to a boil. Remove from heat and let cool to room temperature.
  • Fold the whipped cream and orange zest into the liquid for the orange mousse.
  • After 2 hours, remove the orange slice bowl from the oven and remove the smaller bowl inside. Soak up the juice in the center of the orange slices with a paper towel and let the orange slice bowl dry for another 3 hours.
  • Blanch the orange peels in the liquid from Step 1 and let them dry in the oven until crispy. Reduce the liquid from Step 1 until it reaches a syrup-like consistency. Spoon the orange mousse into the bowl, drizzle a little bit of orange syrup on top, and garnish with the homemade candied orange peels.
