There’s no shame in it, we’ve all probably bought more bread than we could use at some point. Annoying, but it happens. But what to do with that hard-as-a-rock bread? Skip the trash can and head for the oven, because we’ve got a simple Greek feta bake to make!
Greek feta bake is a true wonder of taste. And don’t worry, it’s not just stale bread, that wouldn’t be tasty after all. Rather, this bake cleverly combines scraps with tomatoes, bell peppers, feta, and of course, plenty of olive oil. As the dish bakes, the bread will soak up the flavors of the tomatoes, herbs. Not only will the bread soften, but the whole bake will take on a gorgoeusly slightly crispy crust. My mouth is already watering just thinking about it!
Our Greek feta bake is an uncomplicated dish and makes for an excellent go-to lunch or dinner staple. After all, it only takes a few steps and a few ingredients to bring this recipe home! Start by greasing a ceramic baking dish with some olive oil. Place the bread chunks in it. Now, combine the tomatoes with onions, garlic, bell peppers, olives, and olive oil. Season well. Pour the vegetable mixture over the bread.
Note: If tomatoes aren’t in season, canned tomatoes work just as well!
For the crowning glory, feta cheese is absolutely essential, and don’t be stingy with it. It is precisely this cheese that wil add an incredibly delicious cheesey and crispy crust to your bake. Around 25 minutes later, once your whole house smells like vacation, you’ll know the wait is over and you can finally enjoy your first bite. Greek Feta Bake
Ingredients
- ⅓ cup olive oil
- 4 slices day-old bread
- 1 red onion
- 2 garlic cloves
- 3 bell peppers
- 1 can (14 oz) peeled cherry tomatoes
- A few sprigs of fresh thyme
- 3 tbsp black olives
- Salt & pepper to taste
- 1 block (10½-ounce) feta cheese
Instructions
- Preheat oven to 400°F. Grease a ceramic baking dish with 1 tablespoon of olive oil.
- Cut the day-old bread into large pieces and place them in the baking dish. Drizzle 2 tablespoons of olive oil over the bread.
- Peel the onion and garlic cloves. Slice the onion into thin rings and mince the garlic. Slice the bell peppers into thin rings.
- Heat 2 tablespoons of olive oil in a pan. Sauté the onions, garlic, and bell peppers for 2–3 minutes. Add the cherry tomatoes with their juices, stir to combine, and let the sauce simmer for 5 minutes. Season with salt, pepper, and thyme.
- Spread the tomato mixture evenly over the bread. Top with olives.
- Cut the feta into thick slices and place on top of the casserole.
- Bake the casserole for about 25 minutes, until the feta is lightly browned.
