Lemon Curd Overnight Oats: Creamy, Simple & Refreshing

Overnight oats are always a big hit with us. There are lots of reasons why: They are easy to prepare and perfect to take on the go. Especially on busy mornings, we are always happy when we can enjoy something delicious and homemade at our desks. Sure, you can argue all day long about which kind of overnight oats is the best. But it’s much more fun to just keep trying new things and explore what best suits your taste. Recently, we ourselves discovered these Lemon Curd Overnight Oats. Suffice to say, they are definitely a contender for first place in our breakfast hall of fame.

The secret behind its deliciousness is pretty obvious: lemon curd. The curd was originally developed in England and is made up of all things delicious: Lots of fresh lemons, eggs, sugar and, of course, a good amount of butter. Its consistency is pudding-like and we really have to, at times, hold ourselves back from eating it straight from the jar. The curd really is welcome wherever it goes: It tastes great on bread, in cakes or in desserts. But it also quite literally gilds these lemon curd overnight oats and makes them all the more delicious.

As the name suggests, lemon curd overnight oats need to soak overnight. There are two reasons for this. On one hand, letting the oats sit overnight ensures a creamy consistency. What you might not know, is that this process actually also has health benefits. Soaking activates enzymes in the flakes, which release nutrients and make them even more digestible. Combine that with creamy lemon curd and your delicious breakfast is guaranteed!

LEMON CURD OVERNIGHT OATS

  • Prep time: 10 minutes
  • Inactive time: 8 hours
  • Total time: 8 hours 10 minutes
  • Servings: 2

INGREDIENTS

  • 1/2 cup rolled oats
  • 2 teaspoons of vanilla extract
  • A pinch of salt
  • Zest of 1/2 an organic lemon
  • 2/3 cup milk or plant-based alternative
  • 4 tbsp lemon curd

INSTRUCTIONS

  1. Mix the rolled oats with vanilla extract, a pinch of salt and the lemon zest.
  2. Stir in the milk and fill two oat jars halfway up with the mixture.
  3. Spread 2 tbsp of lemon curd on top of each glass and top with the remaining rolled oats.
  4. Place in the refrigerator to sit overnight.
