Pizza Muffins

One of the best things about pizza, other than the mouth-watering flavor, is that it is infinitely adaptable. Everywhere you look, there's another spin on the classic recipe. This one will certainly not disappoint!

Equipment

  • Muffin pan
  • Small Bowl or Cookie Cutter

Ingredients
  

  • 2 tortillas
  • 6 tbsp tomato sauce
  • grated mozzarella to taste
  • salami or pepperoni to taste
  • ham to taste
  • pineapple to taste

Instructions
 

  • Using a small bowl or cookie cutter, cut three circles from each tortilla and press them into the cups of a muffin pan.
  • Add one tbsp of tomato sauce to each tortilla, followed by some grated mozzarella.
  • Garnish half of your 'muffins' with salami, and the other half with ham and pineapples.
  • Bake for 12 minutes at 350°F.

Easy to grab, easy to go! The pizza muffins can be further adapted to suit your taste. Replace the meat with veggies, or add ground beef, beans, and corn to create a mini chilli con carne! Or is that going too far? Enjoy!
