It was later Europeans who would initially bring the bright vegetable to the Americas. Today, we love it not only as a crunchy raw food wonder, but also as the heart of the world-famous carrot cake. Now it’s time to further push the carrot frontier, and prove that it blends just as well as it bites in our carrot cake smothie.
There is quite a melody in our breakfast drink, besides carrots, this smoothie leans on bananas, pineapple, and coconut for its bright and sweet flavor. Greek yogurt adds tang, and rolled oats structure to the smoothie, while nut butter gives the whole she-bang a gentle creaminess. Finally, vanilla extract, cinnamon, and nutmeg work to round out the carrot cake smoothie’s flavor.
To make the smoothie, first finely chop the carrot and smoothie. Afterwards, simply add all ingredients to a blender or smoothie maker and blend. All in all, it won’t take you more than five minutes. CARROT CAKE SMOOTHIE

INGREDIENTS
- 1 large carrot
- 1 ripe banana
- 1/3 cup frozen pineapple chunks
- 3/4 cup light coconut milk, or plant-based drink of choice
- 1/4 cup plain Greek yogurt
- 1/4 cup rolled oats
- 1 tbsp nut butter
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- A pinch of nutmeg
INSTRUCTIONS
- Peel and chope the carrot finely. Alternatively, you can grate it.
- Chop the banana into small chunks.
- Place all ingredients in a blender or smoothie maker of choice. Blend for 1-2 minutes or until creamy.
- Pour your carrot cake smoothie into a gorgeous glass and enjoy!
