As you can see, this salad only needs a few ingredients. As noted, you’ll need cherry tomatoes, fresh raspberries, some basil leaves, and mini mozzarella. For the dressing, you’ll also need half an organic lemon, olive oil, mustard, salt, pepper, and honey. There’s a chance, you may have all of these ingredients already on hand! Start by washing and halving the tomatoes. Carefully wash the raspberries as well. Set aside a portion (about one-third) for the dressing. Put the rest in a bowl together with the tomatoes. Now drain the mozzarella and add it to the bowl as well.

Next, prepare the dressing. Puree the raspberries with mustard and honey until smooth and then stir in the juice and zest of half a lemon and olive oil. Taste the dressing and pour it over the salad. Finally, add the basil leaves.

If you want to add more ingredients and twists to the salad: Toasted pine nuts are a perfect topping. A finely chopped onion will also add some spice to the bowl. And those who need a meaty-twist are well advised to add a few strips of cured ham.

Ingredients
  

For the salad:

  • 1 cup cherry tomatoes
  • 1 cup fresh raspberries
  • ½ cup mini mozzarella balls
  • 1 handful fresh basil leaves

For the dressing:

  • 1 tsp mustard
  • 1 tbsp honey
  • ½ lemon zest and juice
  • 2 tbsp olive oil
  • salt & pepper

Instructions
 

  • Wash and halve the cherry tomatoes and place them in a large bowl.
  • Gently wash the raspberries, set aside a third, and then add the rest to the cherry tomatoes.
  • Drain the mini mozzarella balls and add them to the bowl.
  • Place the reserved raspberries, mustard, and honey in a container and puree until smooth.
  • Wash the lemon, zest and juice it. Add both to the raspberry-mustard mixture. Add the olive oil and whisk everything into a smooth dressing. Season with salt and pepper to taste.
  • Pour the dressing over the salad. Toss gently and sprinkle with basil leaves.
  • Enjoy the salad immediately. If you want a little more weight, add a fresh baguette as a side.
