Grilled Tortelloni Skewers: The Coolest Way to Grill Vegetables
Since I myself eat a mostly vegetarian diet, I’m always looking for new recipes for BBQ season. Grilled vegetables and grilled cheese are personal favorites, but sometimes what I’m craving is variety. It is the spice of life, after all! Thus, was born our recipe for grilled tortelloni skewers. It’s great for both vegetarian and pasta-lovers, who are sometimes one in the same!
Tortelloni is clearly the focus of this recipe. I personally go for tortelloni witha cheese filling, but feel free to choose whatever you like best! This recipe is adaptable. Likewise, this recipe is punctuated by a medley of vegetables. We advise you to also follow your bliss, and your stomach, here! I personally chose zucchini, bell peppers, tomatoes, and mushrooms. I find that together they provid a rich mix of colors, textures, and flavors. What more can you ask for!
Once you’ve threaded everything onto the skewers, it’s time for the important step of making sure your dish gets properly marinated! To make the marinade, simply mix together olive oil and lemon juice with dried herbs. Toss the skewers in it, making sure everything is evenly coated, and off to the grill it goes!
All that’s missing are the right side dishes to complete your summer dinner. How about a fresh salad, for example? A crisp arugula salad with lemon dressing and shaved Parmesan cheese goes perfectly because it further emphasizes the Mediterranean vibes of the skewers. Or you can go full Italian and whip up a classic Caprese salad with tomatoes, mozzarella, and fresh basil.
If you want to conjure up something extra for the sauce fans, I recommend a spicy tzatziki or a homemade pesto mayonnaise it’s quick, makes a big impression, and tastes great.

Grilled Tortelloni Skewers
Equipment
- 10-12 Skewers
Ingredients
For the skewers:
- 7 oz (about 2½ cups) small button mushrooms
- 1 zucchini
- 1 yellow bell pepper
- 14 oz tortelloni e.g., with cheese filling
- 1 handful cherry tomatoes
For the marinade:
- 1 garlic clove
- 1 organic lemon juiced
- 1 cup olive oil
- 1 tsp basil
- 1 tsp oregano
- 1 tsp paprika sweet
- salt & pepper to taste
Instructions
- Clean the mushrooms and wash the remaining vegetables.
- Cut the zucchini into thick slices. Core the bell pepper and cut it into large pieces. If small enough, leave the mushrooms whole.
- If needed, cook the tortelloni according to package instructions. Drain and let cool completely.
- Peel and press the garlic clove through a garlic press, or mince it finely. Squeeze the lemon juice.
- In a bowl, mix all the ingredients for the marinade.
- Alternate the tortelloni, zucchini, mushrooms, yellow bell pepper, and cherry tomatoes as you thread them onto the skewers.
- Brush the marinade evenly over all sides of the skewers. Let sit for at least 15 minutes.
- Grill the skewers on the preheated grill. Turn them regularly and brush with the marinade between turns to keep them nice, juicy, and aromatic. Grill for about 5–8 minutes, or until they reach the charredness of your liking
- Serve the skewers warm with your sides of choice.
