Recipe for Our Apple-Oatmeal Cake
Oats are considered the healthiest domestic grain. Lots of fiber, protein, vitamins (including B1 and B6), and minerals like calcium and magnesium make oats a true superfood. So why not bake a delicious cake with them? Together with an apple-sour cream filling, our apple-oatmeal cake is as fruity as it is fresh.
To make the apple-oatmeal cake, first prepare all the different components of the cake: Its crust, filling, and topping. Thankfully, this cake is quite easy to make with a few simple steps. Start out by blending all of the crust’s ingredients for the crust until smooth. Then pour it into a greased baking dish.
For the filling, first peel, core, and dice the apples. Then mix the sour cream, eggs, sugar, and pudding powder together. Stir in the apples and its ready to go! Pour the filling on top of the dough. Sprinkle a pinch of cinnamon over it and bake for 30 minutes.
Now for the topping, which can conveniently be whipped up as your cake is baking. In a bowl, mix the rolled oats, sliced almonds, and sugar together. After half an hour of baking, take the cake out of the oven briefly so you can sprinkle the topping over it. Bake for another 20 minutes, let it cool, and enjoy.

APPLE-OATMEAL CAKE
INGREDIENTS
For the crust:
- 1 ½ cups rolled oats
- ¾ cup all-purpose flour
- 2 ½ teaspoons baking powder
- 3 large eggs
- 7 tablespoons unsalted butter, softened
- ⅓ cup granulated sugar
- 1 teaspoon vanilla extract
For the filling:
- 4 apples
- 1 ½ cups sour cream
- 2 eggs
- 1 package vanilla instant pudding
- ¼ cup sugar
- ½ tsp cinnamon
For the topping:
- 1 cup rolled oats
- ¼ cup sugar
- ⅓ cup sliced almonds (optional)
INSTRUCTIONS
- Using a mixer, combine all the ingredients for the crust into a smooth batter. Grease a springform pan and pour the batter into it. Preheat the oven to 350°F.
- Wash, peel, and core the apples. Dice them.
- In a bowl, mix the sour cream, eggs, sugar, and pudding powder. Add the apple pieces and spread the mixture evenly over the dough in the pan. Sprinkle cinnamon over the filling mix.
- Bake the cake for 30 minutes in the preheated oven on the middle rack.
- In the meantime, mix the rolled oats with the sugar and the sliced almonds and sprinkle the mixture over the cake.
- Bake for another 20 minutes.
