We’d have to agree with the writers of The Sound of Music—crisp apple strudel is one of our favorite things! So much so that we’ve found a way to enjoy it for breakfast. Our cinnamon apple strudel oatmeal is wonderfully creamy and sweet, filled with apples, cinnamon, and raisins, just like the Austrian classic. But unlike the traditional dessert, this version comes together in just 15 minutes. It’s the perfect way to start your day, offering a touch of sweetness and energy—just like a trip to the Alps might!

Like Pastry for Breakfast: Our Apple Strudel Oatmeal

As you might know, oatmeal, has long ceased to be a boring breakfast. The creamy grain is healthy, filling, and versatile. With a few simple ingredients, you can conjure up a new taste experience from your oats each and every time. It should also be said that oatmeal is a very healthy breakfast option. It is an excellent source of fiber and contains many important nutrients such as: iron, magnesium, and zinc. It is gluten-free, easy to digest, and keeps you full for a long time without weighing you down. But, what makes it truly wonderful, is that it can also be downright delicious.

And what could be more enticing that that classic combination of warm apples and cinnamon?

Tarter leaning apples such as Braeburn or Pink Lady lend the oatmeal a delicious flavor and provide to the other sweet and creamy notes of this dish. You’ll mix the apples in a cinnamon and raising mix which is where the taste remniscent of apple strudel is created. The recipe becomes truly authentic thanks to the breadcrumbs and nuts, which will be roasted to perfect crispness in a bit of butter. Unlike its dessert inspiration, apple strudel oatmeal is quick and easy to prepare. It is perfect for a quick breakfast and as an afternoon pick-me-up. Even on those nights when you are feeling something sweet, this recipe offers homemade goodness with minimal effort. APPLE STRUDEL OATMEAL

INGREDIENTS

  • ¾ cup rolled oats
  • 1 ¼ cups milk
  • ½ cup water
  • 1 tsp vanilla extract
  • 2 tart apples (e.g., Braeburn, Pink Lady)
  • 2 tsp ground cinnamon
  • ¼ cup raisins
  • 1 tbsp butter
  • 2 tbsp breadcrumbs
  • 2 tsp chopped almonds
  • 2 tbsp chopped walnuts

INSTRUCTIONS

  1. In a small sauce pan, combine the oats with milk, water, and vanilla extract and bring to a boil. Once it comes to a boil, reduce the heat to low and let it simmer for 10 minutes. Stir regularly so that nothing burns. Depending on how creamy you prefer you porridge, stir in more water or milk.
  2. Peel the apples and cut into small cubes. Mix with cinnamon and raisins. Pour the mix into a separate sauepan and combine with 1 tbsp water. Braise over low heat until the apple pieces are soft.
  3. In a pan, melt the butter and add breadcrumbs, chopped almonds, and walnuts. Roast lightly.
  4. Fold half of the apple pieces into the oatmeal, pour into a bowl, and top with the remaining apple pieces. Finally sprinkle the roasted breadcrumbs and nuts on top for a satisfying crunch!

Notes

Our apple strudel oatmeal is easy to make vegan! Simply swap the milk for your favorite plant-based alternative and replace the butter with vegan butter or margarine.
