However, it’s hard to make our already hectic morning both nutritious and delicious. After rolling out of bed and hustling to the breakfast table, you may find you have little time for much else than some toast or a familiar cereal.
But, we promise, that our oatmeal breakfast muffins are worth the work. With a cornucopia of ingredients and all the heartiness of the oats, these little bites pack a mighty punch.
Oatmeal is rich in fiber, which helps you stay full longer and keeps your blood sugar stable. It is also an excellent source of plant-based protein, vitamins, and minerals. The recipe’s banana also contains plenty of vitamins and minerals. It is rich in potassium, magnesium, and vitamin B6, which is important for protein metabolism. Yogurt and raisins are also added to the muffins to help fill your gullet and add a rich nuance to the muffin’s taste. BREAKFAST OATMEAL MUFFINS

INGREDIENTS
- 1 ripe banana
- ¾ cup applesauce
- ⅔ cup plain yogurt
- ¼ cup honey
- 1 teaspoon vanilla extract
- ⅓ cup olive oil
- 2 large eggs
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ⅔ cup rolled oats
- 1 teaspoon ground cinnamon
- Pinch of salt
- ⅓ cup raisins
- ⅓ cup chopped walnuts
INSTRUCTIONS
- Peel the banana and puree it finely.
- In a bowl, mix the banana puree with applesauce, yogurt, honey, vanilla sugar, olive oil, nuts, and eggs.
- In a separate bowl, combine the flour, baking powder, oats, cinnamon, and salt. Add this dry mixture to the fruit mixture and stir until everything is well combined into a smooth batter.
- Fold in the chopped walnuts and raisins.
- Fill muffin cups with the batter and bake at 350°F for 30-35 minutes.
