But even if you’re one of those habitual everything-bagel-with-lox-chive-cream-cheese-and-a-cigarette nosher (or whatever your particular bent) — pay attention! This is serious. You don’t want to miss this ring of perfection: it’s filling, healthy, and so yummy! Everything you want to start the day with energy and balance. It’s also really simple, and you can prep it the night before.

Bagel Quiche

Ingredients
  

  • 1 bagel
  • 1 oz red bell pepper
  • 1 diced mushroom
  • 1 oz cooked broccoli
  • 1/4 cup shredded cheddar
  • 1 egg
  • 1 salt & pepper

Instructions
 

  • Slice the bottom off the bagel and then hollow out the soft bread inside, leaving a sturdy ring.
  • Place all the other ingredients in a bowl and mix them well. Then spoon them into the hollowed out bagel.
  • Bake it for 15 minutes at 320 °F. That's literally it.
