Lemon Baked Oats: Our Recipe For a Refreshing Breakfast

There must be something true to the old addage that opposites attract! In our lemon baked oats, its citrusy freshness met with hearty grain strikes a chord that is sure to resonate. This recipe makes for a delicious breakfast that is sure to keep your belly full and mood good throughout the day.

To prepare our lemon baked oats, you only need a few simple ingredients: rolled oats, flaxseed, half a banana, milk or a plant-based alternative, lemon zest, a dash of lemon juice, baking powder, and some poppy seeds. Excluding the poppy seeds, all you need to do is throw the ingredient into a blender for a moment. Afteward, stir in the poppy seeds and pour the mixture into a small baking dish. Now bake it in the oven for a good 15 minutes and top your lemon baked oats with a light dusting of poppy seed and some lemon slices to garnish. If you want to get gorgeous with it, add a few scoops of your favorite vanilla ice cream to complete the dish.

LEMON BAKED OATS

INGREDIENTS

  • 3/4 cup rolled oats
  • 1 tbsp flaxseed
  • 3 tbsp water
  • ½ banana
  • ⅓ cup plant-based milk
  • 2 tbsp lemon juice
  • Grated zest of 1 organic lemon
  • ¼ tsp baking powder
  • ½ tbsp poppy seeds

INSTRUCTIONS

  1. Preheat your oven to 400°F.
  2. Blitz all the ingredients (except the poppy seeds) together in a blender.
  3. Once blended, stir in the poppy seeds.
  4. Pour the mixture into a small baking dish. Spread evenly.
  5. Bake in the oven for 15-20 minutes.
  6. Allow the lemon-baked oats to cool slightly, then garnish with poppy seeds and fresh lemon slices before serving.
