INGREDIENTS

  • ¼ cup rolled oats
  • ½ cup milk
  • 2 tbsp coconut yogurt
  • 1–2 tbsp coconut flakes
  • Honey, to taste
  • Vanilla extract, to taste
  • 2 tbsp dark chocolate
  • 1 tbsp coconut oil

INSTRUCTIONS

  1. In a bowl, mix the oats, milk, yogurt, coconut flakes, and honey together. Add a dash of vanilla extract, if you so wish. Let the oats briefly soak.
  2. In a separate bowl, melt the chocolate with a little coconut oil using a hot water bath. Pour evenly over the oat mixture. Sprinkle with remaining coconut flakes.
  3. Chill your oats for at least an hour or, even better, as the name implies, overnight. Once the chocolate has set, you can dig into your delicious Mounds overnight oats.
