Strawberry Chutney: Delicious with Steak, Grilled Cheese, and More
The best thing about summer is definitely the strawberries. The sweet and bright red fruits are a sure sign that summer has arrived. In that time of year when they’re especially in season and fragrant, it’s hard to not just gobblem them up. But this time we pulled ourselves together and used the strawberries to make a truly gorgeous spicy chutney. And you’d be surprised just how well this sauce works, along with grill meats, grilled cheese, steak, and all those other goodies.
Making a chutney is like making jam, only without any gelling sugar and, of course, a savory twist. To make this chutney, you’ll need shallots, coarsely ground black pepper, chili pepper, rosemary, apple cider vinegar, olive oil, salt, and some brown sugar in addition to the strawberries. These are the basis for a truly remarkable chutney! Just make sure to sterilize your mason jars before preserving.
The hearty chutney is particularly delicious as a sauce for grilled meat such as steak, chicken or pork fillet, vegetables or bread. But also try it to refine a sandwich or as a topping on even as a twist on your favorite pizza. Strawberry Chutney
Equipment
- 2 half-pint mason jars
Ingredients
- 1 lb fresh strawberries
- 2 shallots
- 1 red chili pepper
- 2 sprigs fresh rosemary
- 1 tsp olive oil
- 1 tsp black pepper coarsely ground
- 3 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 1 pinch salt
Instructions
- Wash the strawberries, remove the stems, and cut them into small pieces.
- Peel the shallots and finely chop them. Deseed the chili pepper and cut it into thin rings.
- Strip the rosemary leaves from the stems and roughly chop them.
- In a pot, heat the olive oil and sauté the shallots over medium heat until translucent.
- Add the strawberries, chili, rosemary, pepper, apple cider vinegar, sugar, and salt.
- Bring the mixture to a boil while stirring constantly. Reduce the heat and let the chutney simmer at a low temperature for about 20 minutes. Stir occasionally.
- Pour the hot chutney into sterilized jars, seal them, and let them cool completely.
