- 5 slices white bread
- 1/3 cup olive oil
- 1 tbsp oregano
- 1 lb pork shoulder, pulled
- 2 pickles, diced
- 1 onion, diced
- 1/3 cup BBQ sauce
- 3/4 cup shredded cheddar cheese
- 5 toothpicks
Preheat the oven to 350°F. Place the pork shoulder in a casserole dish and bake it until cooked all the way through. While the pork is baking, use a rolling pin to flatten out the slices of white bread.
Line a baking tray with parchment paper, then wrap the flattened pieces of bread diagonally around a rolling pin. Secure the opposite corners of each slice of bread to one another with a toothpick, then transfer the rolled slices of bread to a baking tray. Stir together the olive oil and oregano and brush the mixture over the pieces of bread.
Transfer the baking tray to the oven and bake the bread at 350°F for 5–7 minutes. Once the pork shoulder is cooked, remove it from the oven and use 2 forks to pull it apart. Dice the onion and pickles. Remove the toasted bread from the oven, let the toast boats cool, and remove the toothpicks.
Stir together the pulled pork, BBQ sauce, pickles, and onions, then spoon the mixture into the rolled up pieces of toast. Stick additional slices of pickles and onions into the stuffed toast boats, then top everything off with shredded cheddar cheese.
Transfer the stuffed toast boats back to the oven and bake them at 350°F for 10-15 minutes.
