In a pot, boil the eggs to your liking. 5 to 10 minutes should do.
Meanwhile, heat water in another pot, Add the rolled oats and a pinch of salt and bring to a boil. Once boiling, reduce heat to a simmer and stir constantly for 3-4 minutes
Remove the pot from the heat as soon as the oats have completely absorbed the water. Peel the boiled eggs.
Serve the oatmeal in a small bowl and top with olive oil, feta, and boiled eggs. Season with salt and pepper. Optional additions include bell peppers, olives, or lettuce leaves to further enhance the dish.
