Instructions
Preheat oven to 325°F and line two baking sheets with parchment paper.
Using the mortar, crush the lavender blossoms with 1 tsp sugar briefly.
Wash the lemons with hot water and zest them. Juice ½ a lemon.
Add all ingredients to a bowl and knead until a smooth dough forms.
Wrap the dough in plastic wrap and place in the refrigerator for at least 30 minutes.
Flour your work surface and roll out the dough. Cut out round cookies with cookie cutters or a glass.
Place the lemon lavender cookies on the baking sheets. Refrigerate for another 10 minutes.
Finally, bake for 25 minutes, until the edges are golden brown.
Let cool before serving.
