Lemon Lavender Cookies

Ingredients
  

  • 2 tsp tsp dried lavender blossoms
  • 2 tbsp sugar
  • 2 organic lemons zest
  • 1 cup all-purpose flour
  • ¼ cup neutral oil
  • 2 tsp lemon juice

Instructions
 

  • Preheat oven to 325°F and line two baking sheets with parchment paper.
  • Using the mortar, crush the lavender blossoms with 1 tsp sugar briefly.
  • Wash the lemons with hot water and zest them. Juice ½ a lemon.
  • Add all ingredients to a bowl and knead until a smooth dough forms.
  • Wrap the dough in plastic wrap and place in the refrigerator for at least 30 minutes.
  • Flour your work surface and roll out the dough. Cut out round cookies with cookie cutters or a glass.
  • Place the lemon lavender cookies on the baking sheets. Refrigerate for another 10 minutes.
  • Finally, bake for 25 minutes, until the edges are golden brown.
  • Let cool before serving.
