Wash the potatoes and cut them into very thin slices. Potatoes don't have to be peeled and can be consumed with the skin.
Add a layer of potatoes to the bottom of a lasagna baking dish and pour the Bolognese sauce on top of the potatoes. Then add on the baby spinach and a layer of cheese.
Keep layering the ingredients like this until the baking dish is filled to the top: potatoes, sauce, spinach, cheese. The final layer should consist of cheese.
Now bake the potato lasagna in the oven for one and a half hours at 320°F.

This twist on lasagna is not just easy to make; it's also an excellent alternative if you don't have any lasagna sheets at home. But make sure the potato slices are as thin as possible so that they bake all the way through.
