Thanks to its low-sugar and nutrient-dense oatmeal, our apple-oatmeal muffins are a real breakfast treat. The apples in the recipe not only give the muffins a subtle sweetness, but make them delectably moist. We personally can’t get enough of them and you probably won’t be able to either!

Our Apple-Oatmeal Muffin Recipe: A Breakfast Treat

Oats are a real nutritional powerhouse. It’s hard to believe all that those little flakes are full of! Perhaps most important is the vast amount of fiber they contain. It’s the oats’ fiber that keeps you full for a long time and supports gut health. Fiber also lowers the risk of diabetes, protects against high blood pressure, and strengthens the body’s own defenses. There are plenty of reasons to eat our apple-oatmeal muffins for breakfast, including how yummy they are. But, sweetness aside, know that in eating our apple-oatmeal muffins you are doing something as nice for your stomach as you are for your mouth!

Another selling point of these muffins, is just how convenient they are. We like to bake a batch of apple-oatmeal muffins in one-go and then keep them on hand in the fridge. In the morning, we don’t have to think twice before grabbing one or two for breakfast on the go. They’re also great to take to school or to work where they make a delicious, fruity snack in the afternoon. The world is truly your oyster with these muffins, as they do just as well on the road, or even at the airport.

Our Tip: For baking our apple-oatmeal muffins and other muffins, we opt for a muffin tin or silicone muffin molds. Both are more sustainable than paper molds, which are single-use. A muffin tin or silicone mold not only get more uses, but can also be quite easy to clean by hand or in the dishwasher.

APPLE-OATMEAL MUFFINS

INGREDIENTS

  • 7 oz. apple
  • 1¹/₂ tsp ground cinnamon
  • 1 squeeze of lemon juice
  • ³/₄ cup quick-cooking oats
  • ½ cup Greek yogurt
  • 1 ⅛ cups milk
  • 2 ¼ cups flour
  • 1½ tsp. baking powder
  • 1 pinch salt
  • 2 egg whites
  • 1 tbsp melted butter
  • 2 tbsp sugar
  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Peel and core the apples. Then cut them into fine cubes. Drizzle the apple pieces with a squeeze of lemon juice and then sprinkle ½ teaspoon of cinnamon on top. Mix everything well and set aside, covered.
  2. Combine the oatmeal with the yogurt and ¼ cup milk.
  3. In a separate bowl, sift the flour and mix it with the baking powder, salt and remaining cinnamon.
  4. Separate the egg whites. Cream together with the melted butter. Then beat in the sugar and vanilla extract.
  5. Fold in the oat mixture.
  6. Alternate stirring in the flour and remaining milk, being careful not to overmix. Stir just enough to combine—do not stir so much that the batter becomes overdone.
  7. Finally, fold in the apples and divide the batter among 12 muffin cups or a greased muffin tin.
  8. Bake at 350 °F for 20-25 minutes.
