Carrot Cake Overnight Oats: Prepped in the Evening, Gobbled in the Morning
Our carrot cake overnight oats, are a bit reminiscent of a sweet carrot cake – except that our version is for spooning, healthy, filling, and has a creamier consistency. As the name suggests, these overnight oats are prepared the evening before so that they have enough time to soak properly overnight. Soaking lets the oats soften wonderfully and the flavors of the individual ingredients develop and come together.
And let’s be honest, who doesn’t love being able to stay in bed longer in the morning knowing that breakfast is already ready? Overnight oats are simply the perfect breakfast for late risers – and, of course, for early birds too.
For our carrot cake overnight oats, you’ll need a fresh carrot, plain yogurt, walnuts, rolled oats, honey, milk, and cinnamon. Mix all the ingredients together, pour the finished oats into glasses, and off they go into the refrigerator. By the way: The oats can also be adapted for our vegan and lactose-free friends! Instead of honey, use maple syrup and instead of milk and yogurt, go for a plant-based alternative.
You can eat the carrot cake overnight oats cold straight from the glass, we won’t tell! After all, they’re ca delicious treat, especially in summer – or you can warm them up briefly in a pot or in the microwave if you prefer a hot breakfast. Before eating, add fresh carrots, walnuts, or other toppings such as chia seeds, sliced banana, grated apple, or your favorite fruit.

CARROT CAKE OVERNIGHT OATS

What you’ll need
- 2 sealable jars, each holding 1¼ cups
INGREDIENTS
- 1 medium carrot
- 2 tbsp chopped walnuts
- 1 cup rolled oats
- 1 cup milk
- ½ cup plain yogurt
- ½ tsp cinnamon
- A pinch of salt
- 1 tbsp honey
INSTRUCTIONS
- Wash and peel the carrot. Grate it finely with a box grater. Roughly chop the walnuts.
- In a bowl, combine the rolled oats, milk, yogurt, cinnamon, salt, and honey.
- Stir in the grated carrot and chopped walnuts to the oat mixture.
- Divide the mixture evenly between two jars.
- Seal the jars and set them in the fridge to soak overnight, or at least or 8 hours.
- The next day, top the overnight oats with freshly grated carrots, chopped carrots, and other toppings of your choice.
