Ingredients
  

For the batter:

  • cup sugar
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp vanilla extract
  • cup vegetable oil
  • ½ cup orange soda of choice
  • 2 large eggs

For the frosting:

  • 2 tbsp powdered sugar
  • A splash of Orange juice
  • Rainbow sprinkles for decoration

Instructions
 

  • Line a muffin tin with 12 paper liners or grease the cups. Preheat the oven to 350°F.
  • In a bowl, combine all the dry ingredients in a bowl.
  • In another bowl, whisk together the oil, orange soda, and eggs. Gradually add this mixture to the dry ingredients.
  • Fill the prepared muffin cups with the batter. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  • If desired, whip up a quick frosting. To do so, mix powdered sugar with a splash of orange juice. Generously frost the cupcakes and decorate with sprinkles before serving.
