Line a muffin tin with 12 paper liners or grease the cups. Preheat the oven to 350°F.
In a bowl, combine all the dry ingredients in a bowl.
In another bowl, whisk together the oil, orange soda, and eggs. Gradually add this mixture to the dry ingredients.
Fill the prepared muffin cups with the batter. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
If desired, whip up a quick frosting. To do so, mix powdered sugar with a splash of orange juice. Generously frost the cupcakes and decorate with sprinkles before serving.
