Preheat your oven to 375°F. Grease a muffin tin or line it with paper baking cups.
Peel the bananas and mash them with a fork.
In a bowl, combine the flour, baking powder, baking soda, and chocolate sprinkles.
In a second bowl, whisk together the egg, sugar, oil, and mashed banana until frothy.
Add the dry ingredients to the wet ingredients and stir until just combined. Be careful not to overmix, this will make the muffins dense.
Divide the batter evenly among the muffin liners and bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and let them cool slightly. Decorate as desired, we suggest with a dollop of Nutella and a banana slice.
